I’m dropping the ball left and right, I have to admit. I missed this circle last month. School is a new adventure for me, and I am struggling with priorities and balance (probably not unlike most of you!). I was determined to get something posted this month, and while it’s not a recipe, it’s still lovely 😉
I love beets. I love them pickled, and I love them roasted. A salad with roasted beets and goat cheese? YUM. I did things backwards this time. I had images of some gorgeous beets that I roasted in the oven with olive oil, salt and pepper that I planned to share, but realized I have some beets that we picked up at our visit to Belluz Farms that have been waiting patiently for me to do something with, so I decided to shoot those today too. To make a short story long (I’m good at that 😉 ), the roasted beets here are not the ones that you see raw. But it doesn’t matter. They are all good 😀
